Ingredients

    3 cup Meijer 100% Natural Quick Oats
    1 cup Bob's Red Mill Natural Food - Fine Macaroon Coconut, Unsweetened
    1/2 cup Meijer Chopped Walnuts
    1/2 cup Simply Nature Golden Roasted Flax Seed
    1/4 cup Chia, White Whole Seed
    1/2 cup Monk Fruit in the Raw
    1 cup Walden Farms Zero Calorie Pancake Syrup
    1 1/2 tbsp Pure Vanilla Extract
    1/2 cup I Can't Believe It's Not Butter (Original)
    1 cup Brown Sugar
    3 cup Goodfields Trail Mix - Ride the Wave Blend (Dates, Banana Chips, Dried Pineapple, Raisins, Dried Pap
    1/2 cup Meijer Pecan Chips
    4 scoops Premier Protein Powder * Chocolate *

Tips

Because of the time it takes to "set/firm" make sure to plan time accordingly. Needs at least an hour in the freezer or 2-3 hours setting out on the counter or refrigerator. I personally like using the freezer. It sets them firmer for cutting. They will soften some but they should not fall apart if made correctly.

If you want to use more protein powder you may need to adjust the syrup portion. The syrup will not increase totals but the protein powder will.


Directions

In a food processor chop pecans, walnuts, and trail mix (separately or together). After chopping in food processor, combine nuts, trail mix, flax seeds, and chia seeds in a very large mixing bowl. Either line a 17" X 11" baking sheet with parchment paper or spray lightly with your choice of healthy cooking spray. Put the brown sugar, syrup, butter, and vanilla into a small saucepan and bring to a simmer, stirring constantly. Once blended quickly pour over granola mix in the bowl and stir well!!! Now dump your granola mixture into your prepared baking sheet. Spread the mixture with a wooden spoon or a spatula. Cover with (another) sheet of parchment paper or wax paper and PRESS HARD all over the mixture. It needs to be compressed so that the bars will not fall apart when you cut them. Either wait a few hours until totally cool and set, or you can put the pan in the freezer for about an hour. Once cool, cut into desired sized bars (approximately 1" wide). Wrap with parchment paper or Saran Wrap or place in an airtight container. Keeps for several weeks.
