Introduction

Ingredients

    1 can black beans divided, drained and rinsed
    200 g spelt or whole wheat pasta, rotini or elbow
    1 cup grape tomatoes, halved
    1/2 cup sweet corn
    1/2 cup bell pepper, chopped
    1/2 cup red onion, chopped fine
    1 cup avocado, chopped

    1 jalapeno pepper, chopped fine
    4 tbsp unsweetened soy milk
    1 tbsp lime juice
    1 tsp ground cumin
    1 tsp dried cilantro
    1/2 tsp ground black pepper
    1/2 tsp salt
    1/2 tsp garlic powder
    1/2 tsp ground mustard
    1/2 tsp paprika
    2 tbsp nutritional yeast



Directions

Cook pasta as per directions until al dente. Rinse and place in a large bowl.

In a food processor, blend 1/3 cup of the black beans with the jalapeno, soy milk, lime juice and seasonings until smooth. Adjust seasonings to taste.

Add remaining beans, tomatoes, corn, bell pepper, onion and avocado to the large bowl and mix with the pasta. Add the dressing and mix thoroughly.
