Ingredients

    4 serving Egg white, large
    1 cup Spinach, fresh
    2 medium (4-1/8" long) Scallions, raw
    .25 cup, strips Green Peppers (bell peppers)
    1 oz Tomato, grape (3oz = appro 12 tomatoes)
    1 pepper Jalapeno Peppers
    2 tbsp Butter, unsalted
    1 oz Cabot Sharp Naturally Aged Cheddar Cheese - Vermont white cheddar
    2 tbsp Alouette Creme Fraiche (by GREENGIRL531)

Directions

Melt butter
Sauté all veggies (rough chop) to tenderness preference
Whisk 4 eggs, pour over veggies
Add cheese and creme fraiche
Let cook a couple minutes
Gently swirl and fold with a spatula
Let cook to softness/hardness preference
