MAKES 8 CHIMICHANGAS...PREHEAT OVEN TO 375 DEGREES
COOK GROUND BEEK. ADD THE ONIONS. ADD THE SPICES AND WATER. SIMMER OVER LOW HEAT FOR ABOUT 5MIN. REMOVE FROM HEAT AND SET ASIDE.
HEAT TORTILLAS IN MICROWAVE FOR 20SEC TO SOFTEN.
STUFF EACH TORTILLA WITH MIXTURE. ADD 1/8CUP OF CHEESE TO EACH. FOLD TORTILLA FROM THE SIDES, THEN FOLD OVER. PIN THE TOP OF THE TORTILLA TO THE BOTTOM USING A TOOTHPICK.
PLACED FOLDED CHIMICHANGA ON A BAKING SHEET. REPEAT UNTIL YOU HAVE MADE ALL 8.
PLACE BAKING SHEET WITH CHIMI IN THE OVEN FOR ABOUT 10MIN.
