Ingredients

    1 cup sugar
    1/2 cup water
    1/2 tsp cream of tartar
    1/2 tbsp lemon extract
    1 tbsp citric acid
    yellow gel food coloring
    super-fine sugar, to coat

Tips

In a humid climate, drop the molten candy into a bed of cornstarch to prevent it getting too sticky


Directions

Bring sugar, water and cream of tartar to a boil over medium/medium-high heat.
Cook until a candy thermometer registers 300F.
Immediately remove pan from heat, stir in the extract, citric acid and food colouring (mixture will foam).
Spoon drops of the candy onto a silicone mat lined pan.
Cool completely
