Ingredients

1 cup onions, chopped
1 cup carrots, chopped
1 cup red bell peppers, diced
1 cup green bell peppers, diced
1 cup fresh green beans, 1/2" pieces
1 cup frozen yellow sweet corn, Frozen
1.5 cups baked beans, vegetarian
.5 tbsp barbeque sauce, Sweet Baby Ray's Original
1 T tomato paste
.5 cup smoky cheddar, Edam or Gouda cheese, diced or shredded
Directions
Heat oven to 375 degrees.
Over medium heat, saute onions, carrots and peppers until soft. Add green beans and cook 5 minutes. Stir in the corn, baked beans, bbq sauce and tomato paste. Cook 2 minutes or until heated through.
Pour into a baking dish and scatter cheese on top. Cover and bake for 30 minutes, until the casserole is bubbling and cheese is melted.
Serving Size: Serves 6.
