Ingredients

1 pound Ground Turkey
1 cup Bearitos Fat Free Refried Beans
2 tsp Old El Paso Taco Seasoning Mix, Low Sodium Variety
2 tsp water
1 cup Kraft Shredded Mexican Four Cheese blend, 2% Fat
1 cup Iceberg Lettuce , shredded
1 cup Red Ripe Tomatoes chopped
6 tbsp Newman's Own All Natural Chunky Medium Salsa
6 whole-wheat pita Bread
1/4 cup of canned mild Green Chili Peppers
Directions
Brown the 1 pound of ground turkey over medium heat until it is no longer pink, drain meat and return to the pan. Add 1 cup of fat free refried beans and heat through. Then add 2 tsp of taco seasoning with 2 tsp of water to meat and simmer for another 2 minutes, until well combined. Set aside.
Place pita breads flat on a foil covered oven rack and bake for 5 minutes at 400 until pita bread is heated and starting to brown.
top each pita bread with:
1 tbs of salsa
1/2 cup of ground turkey & beans mixture
2 tsp mild green chilis
2 tbs cheese blend
Bake again on the foil covered rack in the oven until cheese is melted. Remove and top with shredded lettuce and chopped tomatoes. Cut into 1/4 triangles and serve.
(I often substitute ground turkey for Boca ground beef crumbles.)
