Introduction

Great LF chicken salad!! Fantastic & low carb on a bed of lettuce or low carb whole wheat wrap! You may also make into a healthy sandwich with your bread of choice. (Nutrition info is for the chicken salad only).

You may also substitute hellmans light mayo for the miracle whip. (This will increase your cals by 5 and fat by .6 grams per serving)

Another option is adding in 1 hard boiled egg to mix it up a bit. Keep in mind this will also alter cals/fat content.


*If you feel this serving size is too large for you, you may reduce the serving size so each recipe feeds 4 (this will in turn reduce the cals/fat per serving).

Ingredients

    12 oz Cubed Chicken
    1 large Apple, diced
    1 stalk Celery, sliced
    ½ cup fat-free plain yogurt
    1 Tbsp Miracle Whip Light
    2 tsp Lemon Juice
    1 ½ tsp Dijon-style mustard
    1/8 tsp Salt
    1/8 tsp Pepper


Directions

Ahead of time boil chicken until done (10-15min). Cube & set aside until cooled. Stir together the yogurt, miracle whip, lemon juice, mustard, and spices until combined. Add cubed chicken, diced apple, and sliced celery and toss to coat. Cover and refrigerate. Serve in sandwiches or pita bread with lettuce and tomatoes, or eat as a cold side dish. YUM!!

    I actually wasn't sure what to expect of this when I started making it, seemed like a weird combination to me but was willing to give it a try. Pleasantly surprised, and it's quite tasty! I added some ground flaxseed and served it on a tortilla - 3/15/11
