Ingredients

    16 oz Ground beef, lean
    4 tsp Old El Paso Taco Seasoning
    0.5 cup kernels Yellow Sweet Corn, Frozen
    2 cup Beans, black
    3 cup Del Monte Diced Tomatoes, No Salt Added
    .5 cup, chopped Peppers, sweet, red, fresh
    1 cup, shredded Romaine Lettuce (salad)
    1 serving Green Onion (fresh-1 stalk)
    3 oz Grape tomoato (by JPATENAUDE1215)
    8 tbsp Sour Cream, reduced fat
    8 tbsp Salsa - Tostitos All Natural Chunky Salsa (medium)
    6 serving White corn chips, Old Dutch Restaurant Style (by YOVIAJO)
    2 cup Cheese - Kraft Tex-Mex Shredded (by 1XNORTHERNER)

Directions

1. Cook ground beef in skillet until browned. Drain. Add taco seasoning packet. 2. Drain juice off of canned tomatoes Add diced tomatoes, black beans(rinse off beans) and corn. 3. Cook uncovered another 5 - 10 minutes or until liquid from tomatoes is reduced. 3. In an ungreased 2-quart casserole dish, place tortilla chips Top with most the beef mixture. Sprinkle with cheese. Add another layer of tortilla chips, rest of the beef mixture and top with fresh tomatoes and green onions. Sprinkle remaining cheese on top. 4. Bake in a 350 degree oven for 10 - 15 minutes until cheese is melted. 4. Top with lettuce, red bell pepper sour cream and salsa. Serving Size: Makes 6 servings
