Introduction

Number of Servings: 4

Ingredients

    1 medium onion
    1 medium carrot
    1/2 cup chopped red cabbage
    1/2 cup chopped sugar snap peas
    3 cloves garlic
    3 tsp mild curry powder
    1 tin baked beans
    1 tin blac-eyed beans
    1/2 cup soya beans
    200ml vegetable stock
    1 tin green lentils
    tabasco to taste
    1/2 tbsp olive oil

Directions

heat the oil and add the chopped onions. fry for 5 mins then add the chopped carrot. fry for a furher 3 mins then add the cabbage and sugar snaps and garlic. cook for another 2 mins. Add the curry powder and stir to coat. add the baked beans and stock and stir well. add remaining ingredients and cook for 20 mins until veg soft (or to taste) Add more water if necessary to get desired thickness.

serve with sweet potato, pitta bread or rice (not included in nutritional value of this recipe)
