Introduction

Number of Servings: 4

Ingredients

    4 bone-in chicken thighs. Skin removed.
    0.25 cup Yellow Mustard (You can use 2 tblsp Dijon, and 2 Yellow)
    2 tsp Mustard seed, yellow
    1 tbsp Pepper, black
    1 tsp Thyme, ground
    1 tsp Rosemary, dried
    1 tbsp Softened, unsalted butter.
    4 tbsp Honey
    Cooking spray for baking sheet.

Tips

Goes great with no-salt added green beans and a baked potato or baked, herbed potatoes.


Directions

Preheat oven to 350 degrees F.
Spray foil-lined cooking sheet with cooking spray.
Coat chicken in unsalted butter, black pepper, thyme and rosemary on both sides.
Put chicken into oven for 10-15 minutes and remove.
While chicken is cooking stir mustard, ground mustard seed, and honey together in a mixing bowl.
Pour half of the Honey-Mustard mixture onto top of thighs and coat evenly.
Put chicken back in oven for 25-30 minutes.
Remove chicken, turn over and spread the rest of the Honey-Mustard on other side of chicken and coat evenly.
Put back in oven for 15-20 minutes, or until juices run clear and internal temp is 170 degrees F.
