Ingredients

    1.5 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted
    2.0 cup, sliced Zucchini
    2.0 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)
    2.0 cup, chopped Carrots, raw
    1.0 cup, chopped Onions, raw
    2.0 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    1.0 cup, pieces or slices Mushrooms, fresh
    Curry spice

Directions

Chop all ingredients. Boil potatoes 1st. Cook in pan. Add coconut milk and curry spice. Simmer. Serve with rice.
