Ingredients

    Canola Oil, 2 tbsp
    Diced Onion, 1 cup
    Garlic, 2-4 cloves minced
    Ground Beef (lean), 1.5 lbs
    Kosher Salt, 1 tsp
    Black Pepper, 1/2 tsp
    Flour, 2 tbsp
    Tomato Paste, 2 tsp
    Chicken Broth (low sodium), 1 cup
    Worcestershire Sauce, 1 tsp
    Thyme (fresh), 1 tsp chopped
    Frozen Peas, 1 cup
    Creamed Corn, 1 can
    Mashed Cauliflower, 3 cups prepared
    Cheddar Cheese, 1 cup grated

Directions

Preheat oven to 400
1. saute onion in 2 T canola oil until they begin to take on color, 4-6 minutes. add garlic and stir to combine.
2. add beef, salt, & pepper. cook until browned. drain fat.
3. sprinkle flour over met and toss to coat. cook 1 minute more.
4. add tomato paste, chicken broth, worcestershire sauce, and thyme. stir to combine.
5. bring to a boil, reduce heat to low, cover, and simmer 10-12 minutes.
6. add peas to beef mixture and spread into 11x7 baking dish.
7. top with creamed corn, then mashed cauliflower. spread mashed cauliflower all the way to edges to create a seal.
8. place baking dish on parchment-lined baking sheet in middle rack of oven and bake 25 minutes or until cauliflower begins to turn golden brown.
9. sprinkle cheddar cheese on top and bake 5-7 minutes more.
10. remove from oven and allow to cool for at least 15 minutes before serving.
