Introduction

Easy no meat meal that satisfies kids and adults. Easy no meat meal that satisfies kids and adults.
Number of Servings: 8

Ingredients

    6 egg whites
    3 whole eggs
    2 cups fresh baby spinach
    1/2 cup grated cheddar cheese
    1/2 grated mozzarella cheese
    (any cheese may be used)
    1 pie crust

Directions

Beat eggs and egg whites in a bowl. Add spinach. Stir so that the spinach is coated with the eggs. Place in a pie crust. Cover with 1 cup of grated cheese. Place in 350 over for about 20 minutes or until eggs are fluffy and cheese is melted and golden brown.

    Incredible!
    I used fillo dough instead of pie crust (less calories) and served with fresh sliced tomatoes. Every good would make it again. Would be great for a brunch. - 7/9/08
