Introduction

Ingredients

1 c. lukewarm water
1 packet traditional yeast
1 tsp sugar
1 cup milk
6 TBSP lard
3 eggs well beaten
1/2 c granulated sugar
4 - 6 cups flour
1/4 c butter
2/3 c demerara sugar
non-stick spray
Directions
Dissolve 1 tsp sugar in 1 cup lukewarm water. Sprinkle yeast over mixture. Set aside.
Put 1 cup milk in microwave safe bowl. Add lard and microwave for 2 - 3 minutes. The lard should be just melted and the milk should not boil.
Beat eggs until frothy in a large bowl. Beat in 1/2 cup granulated sugar. GRADUALLY beat in milk and lard mixture. Stir yeast mixture and gradually add to above mixture.
Gradually add 4 - 6 cups flour until a soft dough is formed. (If I use my Kitchenaide I generally use the full 6 cups of flour, if I mix by hand I will generally use 5 cups flour.)
Place in large bowl sprayed with non-stick spray. Cover. Let rise until double 1.5 - 2 hours.
Divide dough. Roll out into rectangles. Divide 1/4 cup soft butter between the rectangles. Sprinkle with cinnamon to taste. (I like cinnamon so the dough is no longer visible when I have finished sprinkling with cinnamon.) Sprinkle 1/2 cup brown sugar over the dough. Roll up long end. Cut into approximately 1.5 to 2 inch sliced. Place in prepared pans leaving enough space to rise. Cover and let rise until double.
Bake in 350 degree oven 25 - 30 min. Let sit in pan for 5 minutes or so until sugar cools and will stick to the bread. Turn pans upside down on wax paper. Makes about 18 cinnamon buns. Enjoy!!
PAN PREPARATION: (I use two 9 X 9 and one 9 X 13 pyrex baking pans) Divide 1/4 cup melted butter between pans. Sprinkle the 2/3 cup demerara sugar over the melted butter in the pans. Spray edges of pans with non-stick spray.
