Ingredients

    250 g unseasoned breadcrumbs (~2 1/2 c.)
    2 eggs
    1 1/2 onions, finely diced
    2 Tbl tomato paste
    2 cloves garlic, minced
    1 tsp coriander
    1 tsp blue fenugreek
    2 tsp paprika
    2 tsp of dry berberis berries
    2 tsp salt
    2 lbs ground beef
    1 cup cornstarch
    Canola oil

Tips

You can do a mix of half beef and half pork instead of all beef.


Directions

Mix breadcrumbs with enough water to moisten (they should be soft but not soggy/wet). Let sit for ~5 minutes to hydrate while you dice the onion. Mix egg, onion, tomato paste, garlic, and spices into the breadcrumb mixture. Gently mix in ground beef until well-combined.

Pre-heat oil in a large frying pan--the oil should form a generous coating on the entire bottom of the pan. Form beef mixture into 8 patties. Dredge each patty in cornstarch. Pan-fry the patties over medium heat for ~7 minutes per side, or until a nice crust has formed and they are cooked through.
