Introduction

An unusual but more-ish salad, nice as a side dish with cold meat but also good as part of a mixed sallad plate - I like it with tomatoes, chick peas and black olives. Ingredients

    8 oz cooked, peeled beetroot (buy vacuum packed or boil your own in skins, cook and peel)
    1 large sweet orange
    1/2 teaspoon caraway seeds (optional)

Directions

Server 4 as a side dish

Cut the beetroot into chunks and put in bowl
Remove zest from orange & add to beetroot chunks.
Peel orange and remove pith.
Dice orange, catching juice and add to bowl,
Add caraway seeds if using.
Mix well and cover. Chill.
Leave at least 1 hour for flavours to develop before serving.
