Ingredients

    1 cup uncooked Three cheese Tortellini
    3 cups low sodium chicken broth
    1/2 cup diced onions
    2 cloves garlic, diced
    3 medium tomatoes, diced
    2 cups zucchini, cubed
    1 cup carrots, sliced
    1 cup celery, sliced
    2 bay leaves, whole
    1 dash of salt and pepper to taste



Directions

In a seperate pot, prepare the Tortellini as per instructions.
In a large soup pot combine chicken broth, onion, garlic, bay leaves and tomatoes and bring to a boil. Add other vegetables and boil on medium heat for ten minutes. Add salt and pepper to taste. Add tortellini and let simmer for two minutes, just enough time for the tortellini to absorb a bit of the soups flavor.
Serve and enjoy!

    Incredible!
    This was really good. My husband enjoyed it also. I’d never had zucchini in soup before. Only change was I added some fresh basil and a small amount of hot spice. - 6/29/21

    Very Good
    my husband isn't all that keen on cheese, so when i make it again i'm going substitute the tortellini with something else. but a very good recipe. - 1/5/08

    I love this soup because of all the vegetable servings! Delicious and somewhat cheesy. It is indeed very hearty. Added chicken to make the husband happy, but I would have it without the chicken. - 7/23/07
