Introduction

Number of Servings: 8

Ingredients

    1 cup of white flour
    1 and 1/4 cups whole wheat flour
    2 eggs
    1/4 cup water
    1 tsp salt
    2 TBSP extra virgin olive oil

Directions

Put the ingredients in the order recommended for your bread machine, and use the "dough" setting. Let it knead well, and rest a while. On a well-floured surface, roll dough out to about 1/8 inch thickness and tri-fold. Using a sharp knife, begin cutting strips from the end. Unfold the noodles and stretch gently. Let dry a bit on a towel. Boil not too long: al dente. Serve with your favorite sauce, but the one my grandma used goes as follows, and is not included in the nutritional value for this recipe:
1 cup heay whipping cream
3 TBSP butter
1/2 cup parmesan cheese
salt and pepper to taste
