Introduction

When it's too hot to cook, here's the perfect family dinner! When it's too hot to cook, here's the perfect family dinner!
Number of Servings: 6

Ingredients

    1 cup black beans (drained and rinsed)
    1 cup frozen or fresh corn ( I used Trader Joe's roasted frozen corn and it was great)
    1 cup diced tomatoes
    diced onion
    diced bell pepper (both onion and pepper are optional)
    1 c salsa (fresh is better tasting!)
    1/2 c shredded light cheddar or mexican cheese
    1 handful or so Tostitos Baked Scoops
    4 TBSP Light Ranch
    3-4 baked chicken breasts

Directions

In a big salad bowl, add all ingredients and mix well. Add ranch, salsa and chips last just before serving.
