Introduction

Serves 6 large burritos.

Ingredients

    6 serving DON PANCHO Golden Blend Tortillas(Serving=1 Tortilla) (by POMPAJEAN)
    16 oz Turkey, Ground turkey, 93% lean
    1 cup, sliced Onions, raw
    3 serving Garlic, cooked (1 clove / serving)
    1 pepper Pepper, ancho, dried
    6 oz Cacique - Ranchero Queso Fresco
    1.75 cup Refried Beans
    1.5 cup La Victoria Enchilada Sauce
    6 serving Cheese, Cabot Extra Sharp Cheddar Cheese (1 serving = 1 ounce)
    1 tbsp Chili powder
    1 tsp Salt
    1 tsp Pepper, black
    1 fl oz Lime Juice

Tips

Play with the vegetables of your choice. I like the ground turkey as it makes the burrito seem lighter. Of course you can add rice or eliminate the queso. It's all up to you


Directions

Roast or have available roasted poblano pepper, chop
Shred cheese
Chop onion and garlic.
Saute' vegetables with lime juice - Set aside
Cook ground meat with spices - Set aside
Warm refried beans and tortillas- Set aside

Fill tortillas including Queso Freso and place in 9x13 baking dish.
Pour enchilada sauce over burritos and sprinkle cheddar over.
Bake in 350 degree oven for about 30 minutes or until you can smell the goodness
