Introduction

This is a standard Ashkenazi (European) Jewish recipe, served both as a dessert and as a side. I have reduced calories by using Neufchatel rather than standard cream cheese, part-skim rather than whole milk ricotta, 1% milk rather than whole milk or heavy cream, margarine rather than butter, and yolk free egg noodles. Ingredients

    4 oz Neufchatel Cheese (1 oz. = 2 TB)--half an 8 oz. softened bar
    1/2 of a 12 oz container of ricotta cheese made with part-skim milk
    1/2 cup granulated sugar
    4 large eggs
    1 cup 1% (skim) milk
    8 tbsp (1 stick) margarine, melted
    1 tsp cinnamon, ground
    !/2 cup raisins
    8 oz dry Manischewitz Wide Yolk Free Egg Noodles, prepared according to pkg directions

Directions

Preheat oven to 350 degrees Farenheit. Spray a 9" x 13" non-stick metal baking pan with pan spray (do not use baking spray that includes flour).

In large bowl, beat together cheeses until light and fluffy. Gradually beat in sugar until thoroughly blended. Beat in eggs, one at a time. Gradually beat in milk. melted butter, and cinnamon until smooth.

Place prepared noodles in dish, mix in raisins. Make sure you don't have clumps of raisins, distribute them evenly. Pour cheese mixture over the top, smoothing. Poke down any noodles sticking up!

Go ahead and sprinkle with more cinnamon if desired (I don't). Bake until light golden brown 30-45 minutes. Allow to cool 10 minutes before serving. May also be served room temperature or chilled.
