Ingredients

    8oz penne pasta
    250g mushrooms, slices
    1 large onion, chopped
    1 large red pepper, chopped
    250g frozen spinach, thawed
    1 tsp dried oregano
    1/2 tsp black pepper
    16oz fat free ricotta
    400g chicken breast, cubed
    112g cheddar cheese, fat free, grated
    1/2 cup parmesan cheese, grated
    1/2 cup skim milk
    1.5 cup healthy request cream of mushroom soup

Directions

1. Cook pasta according to package directions. Drain.
2. Preheat oven to 425 degrees.
3 Cook chicken in non stick pan until browned then remove.
4. Spray skillet with cooking spray and cook mushrooms, onion and bell pepper until tender
5. Add spinach, oregano, and pepper.
6. Mix well.
7. Remove from heat.
8. In a large bowl combine pasta, chicken, spinach mushroom mixture, soup, milk, ricotta cheese, 1/4 cup parmesan cheese and mix well. Salt and pepper to taste.
9. Coat a 9 x 13 inch baking dish with nonstick cooking spray.
10Pour chicken pasta mixture into baking dish. 10. Sprinkle with remaining cheese.
11. Bake in preheated oven for about 25 minutes or until bubbly and lightly browned.
