Introduction

Ingredients

    1 Hard boiled egg (as many as you will be making), cooked, cooled and yolk discarded. (and I DO mean discarded! Don't be snacking on that fatty yellow hunk!)

    1 Tbsp Hummus (any flavor, calorie count will change, check your container)

    Garnish (optional) paprika or parsley is good. Also tiny diced roasted red peppers, onions or a little minced garlic is good.

Directions

Prepare hard boiled eggs. I like to buy an extra dozen to boil and keep refrigerated for snacking on or making these! Need tips on boiling eggs: Please see: http://www.mrbreakfast.com/ask.asp?askid=24 for detailed instructions. I usually place eggs in saucepan, just covered with water and then turn up heat. Once boiling I boil for 8 minutes then cool with cold running water before peeling. Cooling completely is better, but you may like them warm.

Peel shell from eggs. Slice the egg in half length-wise. Remove yolk and discard. Fill each hollow left by yolk with a dollop of hummus. I use about 1 tbsp on two halves.

Garnish eggs with a sprinkle of paprika or a little parsley (fresh snipped or dried, whatever you have on hand). Try garnishing with diced roasted red peppers or minced garlic for a richer taste! Be creative but keep it low cal, like tomatoes or onions, maybe capers.

Arrange on plate.

Enjoy!

Warning: These can be addictive, especially if you use the Sabra brand smooth hummus!

    Incredible!
    Great snack idea. I often make hummus, but we eat it with pita or tortilla chips. I have tried it with veggies, but just did not enjoy it. This is great, and I get the protein from the egg whites. Thanks. Question??? I half of an egg is a serving, right? - 2/22/10
