Ingredients

3 cup Baby Romaine Lettuce, torn or coarsely cut
3 cup cut up Kale
1 cup Quinoa, Tricolour, uncooked
2 Green Onions
2 medium Radishes
8 large Strawberries, or about 12 small
Optional;
Balsamic Vinaigrette Dressing,
Lemon juice,
Salt and pepper
Tips
Make sure to remove the stems from the kale. Massaging helps break it down so it's more tender.
Directions
Rinse the quinoa (soak for 3 minutes then strain and rinse with cold water.) Cook as directed on stove or in Instant Pot.
clean and cut romaine; massage and chop up kale; thinly slice radishes and green onions. Combine all veggies.
Cool the quinoa and fluff with a fork than add to the salad.
Toss and add sliced strawberries when serving so they don't go mushy.
Top with dressing if desired OR a squeeze of fresh lemon, salt and pepper.
Serving Size: Makes about 8 cups.
