Wasting the whites made no sense so I invented this recipe which uses 15 whites, or 3 whites x 5 days a week coffees! Ingredients

    0.25 tsp Garlic powder
    1 cup Kraft Mozzarella Finely shredded Part Skim cheese
    0.50 tsp Cream Of Tartar
    0.50 tsp Xanthan Gum
    3 tsp Trader Joe's everything but the bagel seasoning
    4.5 tbsp Nutiva coconut flour (by MARIEGASPARI)
    15 large Egg white, fresh

Tips

Slice and toast. Use as bruschetta, croutons, use in stuffing recipe or remove savory ingredients like garlic powder and add some low carb sweetener like organic stevia and maybe some cinnamon and turn it into a dessert or french toast.


Directions

Preheat oven to 325. Whip room temperature egg whites, cream of tartar, and optional xanthan gum into stiff peaks (it takes about 5 minutes). Fold in garlic powder, coconut flour, and shredded cheese to the whipped egg whites. Break up any clumps as best as possible but do not deflate the egg whites.

Pour mixture into loaf pans lined with parchment paper for easy release. Optional: Sprinkle Everything but the Bagel seasoning on the loaves before baking.

Bake at 325 for approx. 45 min, cover, bake another 45 min to 1 hour until firm. Let cool completely before slicing.

Bread tastes best toasted and eaten with butter or use as sandwich bread after toasting.

Notes: I use a very fine organic coconut flour made by Nutiva. You can also add different shredded cheeses and seasonings to change it up. Xanthan gum is an optional ingredient.

Serving Size: makes one large loaf and a small loaf pan
