Ingredients

    2 cup Flour - Gold medal all purpose flour
    1.5 tsp Cinnamon, ground
    6 tsp Baking Powder
    .5 tsp Salt
    .5 cup, pitted Prunes, dried
    2.64 fl oz Instant Coffee
    4 tbsp Butter, salted
    1 cup Granulated Sugar
    .25 cup Maple Syrup
    .66 cup Milk, 3.25%
    2 tbsp, unsifted Powdered Sugar

Directions

Preheat oven 350 degrees. Butter & flour a spring form pan or similar pan. In small bowl plump quartered prunes in hot coffee for 5 min., let cool.

In a medium bowl sift together dry ingredients and set aside.

In a large mixed together softened butter and sugar, add egg, vanilla & maple syrup. Mix well.

Puree prunes with the coffee in food processor or ninja. add to the cake batter and mix well.

Alternate adding flour mixture and milk scraping down the sides of the bowl

pour cake batter in pan and bake for 30-35 min. Cool cake in pan for 10 min.

Remove cake to serving plate & dust with powdered sugar.
