Ingredients

    3.0 cup Whole Wheat Flour
    3 cup Quaker Oats Old-Fashioned Rolled Oats
    1 cup, packed Brown Sugar
    1 tbsp Cinnamon, ground
    1.5 tsp Salt
    1.5 tsp Baking Soda
    1 cup Pumpkin seeds
    2.5 cup Apple Sauce (Motts) Unsweetened
    0.5 cup Canola Oil
    1 large (3-1/4" dia) (approx 2 p Apples, fresh with skin
    3 large Egg, fresh, whole, raw

Directions

Preheat oven to 350*F. Mix dry ingredients in one bowl. Whisk eggs, oil and applesauce in second bowl. Mix all ingredients together. (May substitute seeds for nuts. May use up to three whole apples if you wish.) Brush muffin tin with coconut oil (or other) to prevent sticking. Fill 24 muffin spots until all batter is used. Bake 20-25 minutes. Rest in pans for 5 minutes before removing to cooling rack. These can be frozen. Read the nutrient info - good stuff!
