Yummy versatile recipe. Have it for lunch or snack. You can substitute a medium bell for the baby peppers. Also you can use more parsley and eliminate the cilantro. You can also use more olive oil in a skillet and cook the fritters in the stove,or eliminate the extra oil to reduce calories. If you choose the latter method. Ingredients

    0.5 cup Flour - Gold medal all purpose flour
    1 Serving(s) Great Value egg large
    0.25 cup (8 fl oz) Water, tap
    1 tsp Baking Powder
    1 1tsp Olive Oil
    2 serving "Great Value" Golden Sweet Whole Kernel Corn, No Salt Added (.5cups)
    2 serving Baby Bell Peppers (3 peppers = serving)
    1 tbsp Parsley
    0.1 serving(s) Cilantro
    0.5 tsp Salt
    1 small (3" long) Scallions, raw
    1 tsp Worchester sauce

Directions

Add flour, water,baking powder, egg, and water into a medium bowl and will until smooth Add olive oil, salt worchestershire sauce or lack pepper and mix well. Next add the corn, diced bell peppers, parsley chives and chopped scallion Mix well and set aside. Prepare 2 six count muffin pan by sprayed with cooking spray. Heat oven to 350. Bake 15 minutes.
