Introduction

A tasty chicken/pesto/tomato/pasta/spinach concoction that my boyfriend refuses to eat because he insists on only eating meals that come from actual recipes. His loss! A tasty chicken/pesto/tomato/pasta/spinach concoction that my boyfriend refuses to eat because he insists on only eating meals that come from actual recipes. His loss!

Ingredients

    chicken breast, tomatoes, garlic, pesto, rotini pasta, onion, spinach, olive oil, parmesan cheese

Directions

Cut chicken in bite-sized pieces. dice onion. Heat olive oil in pan on med. heat, add chicken after about a minute. Prepare pasta according to package directions. Add onion to the chicken. This is where I tend to add extra stuff since I'm flavor-impared. Minced garlic, onion powder, crushed red pepper, are all viable options. After chicken appears white and fully cooked, add can of tomatoes (crushed, diced, whatever you prefer) and bring to a boil. Add spinach, lower heat, and cover until spinach appears wilted. Remove lid and allow for excess liquid to boil off. When pasta is done, strain and add to chicken/tomato/spinach mixture. Remove from heat and mix pesto in thoroughly. Plate, cheese, and eat!
Makes about four servings. I usually make it for two. Enjoy!
