Ingredients

1 serving Olivio, Olivio Premium Spread with Olive Oil, 1 Tbsp
2 tbsp chopped Shallots
2 cup, chopped Swiss Chard
1 tsp Baking Powder
.25 tsp Nutmeg, ground
1 cup 1% low fat cottage cheese (Great Value)
.75 cup Milk, 2%, with added nonfat milk solids, without added vit A
.5 tsp Pepper, black
.50 cup Flour whole wheat pastry flour 1/4 c serving (by MYUTMOST4HIM)
6 large Egg, fresh, whole, raw
.5 cup Kraft Shredded Parmesan Cheese Natural Cheese
Tips
I left out salt, but you can add a pinch if you wish. The recipe says to serve immediately, but I let it cool about 10 minutes.
Directions
1. Preheat the oven to 350 degrees Farenheit. Coat an 8 inch square baking dish with cooking spray.
2. In a large saute pan over medium heat saute chopped shallot and Swiss-chard stems for about 3 minutes, then add the chopped Swiss-chard leaves and saute until the wilt - about 2 minutes.
3. In a large bowl, whisk together the flour baking powder, nutmeg and pepper.
4. In another bowl whisk the eggs, then add cottage cheese, milk Parmesan. Pour and mix gently into the flour mixture.
5. Gently fold in Swiss-chard mixture. Scrape the mixture into the prepared baking dish and bake until set in the centre (knife comes out clean when inserted). Approximately 45 minutes.
