Introduction

Israeli Couscous is a larger form of the couscous you may be familiar with. I find it in our local "Bulk Barn". This is a lovely side dish in the summer. Ingredients

    2 cups chicken stock or water if you are sodium conscious
    1 cup Israeli Couscous
    1/4 cup freshly squeezed lemon juice (2 lemons)
    Olive oil
    Kosher salt
    4 oz cooked chicken breast,
    Freshly ground black pepper
    1/4 cup minced scallions, white and green parts
    3 tbsp chopped cilantro
    1 hothouse cucumber, unpeeled, halved lengthwise, seeded, and medium-diced
    2 cups halved cherry tomatoes


Directions

In a medium sized pot, bring broth or water to a boil and add Couscous. Simmer for about 8 minutes until just tender - remove from heat and drain - let cool.

Add the lemon juice, olive oil, and pepper. Stir.
Cut the chicken into medium dice and add to the Couscous. Add the scallions, cilantro, cucumber, tomatoes. Season, to taste, and serve immediately or cover and refrigerate. The flavors will improve as it sits.
