Introduction

This is a recipe I got from my mother in law. They are low in calories and you can fill them with anything you want. A great dessert or even breakfast This is a recipe I got from my mother in law. Number of Servings: 12

Ingredients

    1 cup all-purpose flour
    1 teaspoon sugar
    1/4 teaspoon salt
    3 small eggs
    2 cups milk 2% (don't use skim milk, the crepes will get watery)
    2 tablespoons butter, melted

Directions

1. Sift together flour, sugar and salt and set aside. In a large bowl beat eggs and milk together with an electric mixer. Pour in flour mixture and continue beating till smooth. In the end stir in melted butter.
2. Heat a lightly oiled frying pan over medium - high heat. Pour the batter in pan, using 2 tablespoons for each crepe. Tip and rotate pan to spread butter as thinly as possilbe. Brown on both sides and serve it hot, with any filling you want. (I sometimes eat them plain)
