Ingredients

    2 cups Zucchini sliced 1/4 inch thick
    2 cups summer squash sliced 1/4 inch thick
    1 large sweet onion sliced 1/4 in thick
    1 green bell pepper sliced
    2 TBSP olive oil
    salt to taste
    Garlic powder and lemon pepper

Directions

place vegetables in large bowl sprinkle with olive oil. mix with hands to coat well. Put foil in jelly roll pan , spray with oil. spread out vegetables on foil. sprinkle with salt, garlic powder and lemon pepper. Bake at 425 degrees for 35 minutes. Stir half way through bake time.
