Introduction

Ingredients

6 slices bacon, diced ¼"
½ cup yellow or sweet onions, diced, or whites of green onions, sliced
Avocado or Olive Oil
2 tsp. Cornstarch
2 tsp. water
½ cup Cider Vinegar
½ cup water
½ up Lakanto Monk Fruit Sweetener, Classic
Salt and Pepper to taste
Tips
Let sit for a couple of hours, then re-heat, if you want a less vinegary flavor.
Excellent on spinach and other strong greens, and as a green bean dressing.
Directions
Fry bacon until crisp.
Remove bacon from pan, leaving fat, and set aside.
Add onion to bacon fat in pan and cook 5 minutes or until onion is soft.
Remove onion from pan, leaving fat, and set aside with bacon.
Pour bacon fat into measuring cup and add enough avocado or olive oil to equal 1/2 cup.
Add fat/oil to cornstarch mixture and set aside.
Combine vinegar, water, sugar, salt and pepper in the same saucepan, deglazing any bacon/onion residue, and heat to a boil.
Add cornstarch mixture and cook until thickened, about 1-2 minutes.
Remove from heat and add bacon and onion.
Serve warm.
