Ingredients

    * *Potato, raw, 4 large (3" to 4-1/4" dia.) (remove)
    * *Extra Virgin Olive Oil, 3 tbsp (remove)
    * Salt, 1 tbsp (remove)
    * Pepper, black, 1 tsp (remove)

Directions

- Preheat oven to 450. Place cookie sheet in oven to heat up

-Cut potatoes in half then each half into 4 or 5 wedges.

-Place wedges into mixing bowl and put in 2 tbsp of olive oil, the salt and black pepper (substitute in garlic salt if desired) and mix until potatoes are covered

-Pull out baking sheet, pour place 1 tbsp of olive and spread

-Pour potato wedges onto sheet (you should hear it sizzle) and make a single layer

-Bake at 450 for 20 minutes then turn potatoes over to other side to get crispy and bake another 20 minutes.

    Very Good
    I thought these were really good. I soaked the wedges in water for about 30 minutes prior to baking, to help make them crispier. They cooked fasted than indicated - about 30 minutes total. A really nice substitution for fried fries. - 3/26/09

    Adding spices also really heats it up and makes them really good. I like using paprika and chili powder, but anything goes well really. - 9/6/08
