Introduction

Ingredients

    2 cups AP flour
    1/4 cup oat flour, homemade from Old Fashioned oats
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp iodized salt
    1/4 cup salted butter, softened
    1/2 cu[, unpacked brown sugar
    1/2 cup white sugar
    2 large eggs
    1 cup plain Greek nonfat yogurt (or use sour cream)
    1 cup, mashed banana, about 3 very ripe bananas
    1/2 cup walnuts, shelled pieces
    1 1/2 cup semi-sweet chocolate chip morsels

    SPECIAL EXTRA
    2 tbsp white or brown sugarr
    1/4 tsp cinnamon, ground

Directions

Preheat oven to 350* F.
Combine flour, baking powder, baking soda, and salt in a medium bowl. In a separate bowl, beat butter and sugars with a hand held electric mixer until blended. Then add eggs one at a time, and plain yogurt until blended. Add flour mixture to this alternately with bananas, just until blended. Stir in nuts and chips.
Grease a non-stick 9x5 -inch loaf pan with butter and mix together SPECIAL EXTRA ingredients Coat buttered pan with it and then pour batter in pan. Sprinkle batter with remaining sugar-cinnamon mix.
Bake 1 hour or until toothpick inserted in center comes out clean. Don't open door when baking, this insures that your time will be correct. Cool 5 minutes and then remove bread from pan to wire rack, cool completely.
