Ingredients

    2 tablespoons olive oil
    1 teaspoon salt
    1/4 teaspoon pepper
    4 6oz Tuna Steaks (3/4" thick)
    2 teaspoons whole black peppercorns crushed
    1 tablespoon fresh thyme
    2 shallots, cut into rings
    1 10oz package fresh spinach
    1 lemon quartered

Directions

Heat 1 tablespoon of olive oil in large skillet over medium heat. Sprinkle tuna with 1/2 teaspoon of salt, the crushed peppercorn, and thyme. Cook turning once to desired done-ness (2 to 3 minutes per side for medium rare). Put tuna on individual plates. Wipe out the skillet heat 1 tablespoon of olive oil over medium heat. Add the shallots and cook 2 minutes. Add the spinach, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until wilted. Serve with Tuna and lemon wedges.

    Way too much thyme in our opinion. But otherwise, it's more about the quality of tuna steak that you buy. - 5/15/09
