Ingredients

4 walleye fillets, fresh or defrosted if frozen
1 whole zucchini, sliced
2 green peppers chopped into 1" pieces
1 tomato chopped
1 onion, chopped into 1" pieces
course sea salt
cracked black pepper
dried parsley
ground cumin
cooking spray
2 cups cooked brown rice
Directions
*Chop veggies and start sauteing the onions and green peppers in a hot skillet sprayed with cooking spray.
*After the onions have softened add in the tomoatoes and zuchhini.
*salt and pepper the veggies
*While the veggies finish up, spray one side of the fillet with the cooking spray, lightly, and season with the salt, pepper, cumin, and parsley.
*Before the zuchinni is fully softened pour veggies in bowl and set aside for a few minutes.
*In same hot pan, spray again with cooking spray and with tongs place fillets in the hot skillet, seasoned side down.
*Spray again unseasoned side of fillets, and season as well.
*Walleye cooks really fast so be prepared to turn in one to two minutes.
*Turn walleye carefully as it is quite flakey.
*One to two minutes on the other side and walleye is ready!
*Plate with the brown rice and veggies.
