Introduction
Delicious and safe for gluten sensitive eaters. I made this as my 11st attempt at making gluten free salmon patties. It was not dry enough to form the patties with so I made a loaf instead. You could make salmon patties with this recipe but will need to add twice as much of the crushed Fritos.The finished dish (loaf) tastes similar to Hush Puppies with Salmon and my family loves it. Ingredients

1 cup, chopped Onions, raw
1 Red Bell Pepper (one medium/large pepper, chopped)
2 large Eggs
30 oz Pink Salmon - Wild Alaskan Salmon Skineless and Boneless Canned [I have also used ground salmon from Wild Alaskan fresh salmon instead of canned]
8 oz Frito Lay Frito chips (crushed fine)
Salt and Pepper (to your liking) Frito's already have salt on them so you may not need to add much salt.
Optional seasonings: small amount of Cayenne pepper, and/or Brown Sugar, Cumin, Chili, Garlic... (you can't go wrong with adding seasonings you like)
Directions
Pre-heat oven to 375F
1) In a large mising bowl add chopped onions and chopped bell pepper.
2) Add two raw eggs and mix with onions and bell pepper.
3) Add canned salmon and make sure to crush any bones with your fingers. [canned salmon has small circular bones in it, and they are edible but need to be crunched easily with your finger and thumb.] Thoroughly mix salmon in with eggs, onions and egg mixture.
4) Mix in crushed Fritos and season with salt and pepper and any other favorite seasonings per your taste.
Once all is mixed, place loaf in oiled/greased glass meatloaf pan and bake for 40 minutes. Allow to cool and slice into eight servings. Serve with condements of choice. A green salad is recommended to complement the flavors of this dish and makes it more nutritionally complete and healthy.
