The vegetables in this salad are marinated in Italian dressing for a tasty, crunchy, summer salad. I got this recipe from a friend more than 25 years ago, and it's still a favorite. Ingredients

    1 bunch broccoli - sliced thin (~6 cups)
    5 stalks celery - sliced thin (~3 cups)
    1 can water chestnuts (1 cup)
    1 box cherry tomatoes (~2 cups)
    onions - chopped fine (1/2 cup Vidalia)
    fresh ground pepper

    1 pkg Good Seasons Italian Dressing mix - prepared

    (mushrooms - optional)

Directions

* Mix all ingredients together. Let stand 24 hours.

* This makes 12 one-cup servings.

* When preparing the Italian dressing, I use 1/4 cup of EVOO (extra virgin olive oil) instead of the 1/2-cup recipe version on the package.
