Introduction

Number of Servings: 120

Ingredients

    Cream:
    1 cup butter
    2 cups brown sugar
    1 cup white sugar

    Then add and set aside:
    4 eggs
    4 cups shredded zucchini

    Mix dry ingredients:
    2 cups whole wheat flour
    6 cups all-purpose flour
    4 tsp baking soda
    4 tsp ground cinnamon
    2 tsp baking powder
    2 tsp salt
    2 tsp ground nutmeg
    1 tsp ground cloves

    Stir in at end:
    2 cups raisins
    2 cups chopped dates



Directions

In a mixer cream butter and sugars, then add eggs and beat well, then stir in zucchini.

Separately mix dry ingredients.
Add dry ingredients to wet ingredients and stir till well combined.

Stir in raisins and dates. (Can use either all raisin or all dates if you prefer.)

Drop by rounded teaspoonfuls on a greased baking sheet. Bake at 375 degrees Fahrenheit for 12-15 minutes until golden brown. Cool in pans 2 minutes before removing to a wire rack. Makes 10 dozen. Serving size is one cookie.
