Ingredients

1 Tbs olive oi
1# chicken breats cut into bite sized pieces
1# ff turkey smoked sausage cut into coins
1# small cooked shrimp - no tails
1 quart ff chicken broth
1 large onion diced
2 Tbs chopped garlic
1/4 tsp cayenne pepper
2 Tbs Worcestershire sauce
1 tsp hot pepper sauce
2 cups uncooked instant brown rice
1/2 tsp salt
Directions
12 servings of 1 cup each.
Pour chicken broth in large pot and start heating. When bubbling, add rice and salt.
Add olive oil to a large skillet and set on medium.
Chop chicken and sausage and add to skillet. When about 1/2 cooked add onion, garlic, cayenne pepper, Worcestershire sauce and hot pepper sauce. Cook another 8 to 10 minutes. Pour into the rice mixture and stir well. With a lid on simmer for 20 minutes.
This is a very mild Jambalaya. If you want it hotter, try adding some of Emeril's Essence Cajun Seasoning. (Recipe available on the web with spices you have on hand)
