Introduction

Ingredients

1 Whole sweet red pepper, roasted (store bought)
5 Sun Dried Tomatoes, sliced
Half a medium zucchini, sliced thin with peel
1 Chicken breast, no skin, boneless, sliced
2 Whole Wheat medium tortillas
1 tbsp soya oil (or vegetable oil)
Small amount of red onion, chopped
Directions
Place tortillas on a baking sheet and place in 400 degree oven for a couple of minutes, until golden. Remove from oven.
Thinly slice the zucchini and lightly fry in a pan with the soya oil. Remove zucchini, leaving excess oil in pan.
Slice the chicken breast and fry it in the remaining oil. When cooked (a few minutes) and golden, remove from pan. You may wish to place it on a paper toweled plate to remove excess oil.
Slice the red pepper, onion, and sun dried tomatos and mix with the chicken and zucchini in a bowl.
Top the tortillas with the vegetable mixture and place in oven set to Broil, just to brown the top.
You may add parmesan or other cheese varieties if you wish (adding necessary calories, etc.)
Makes 2 pizzas for yourself or share with a friend for half the calories!
Serve with your favourite side item (such as a fresh mango salad - seen in picture).
