Introduction

This is something I started making in university to go with just about everything and can be served hot or cold. I suggest playing with the spicing and ingredients, I often put in mushrooms for example. I suggest playing with the spicing and ingredients, I often put in mushrooms for example.
Number of Servings: 6

Ingredients

    1 can sweet corn
    1 can pinto beans (rinse off juices)
    1 red bell pepper
    spice to your taste

Directions

Get out items, and wash and dice pepper, and pull basil into little pieces if using fresh.
I put the beans into a medium high heat pan, mush them just a bit and cook for a minute or two with a little butter or oil whichever I have on hand. Then I add the pepper and basil. When the pepper is just getting soft I add the corn and cook it until it is hot through. After I eat it hot and cold, often in tortillas.
