Introduction

Very easy and good on cold days! Very easy and good on cold days!
Number of Servings: 6

Ingredients

    1 Tbs. olive oil
    1 Tbs chopped dry onions
    1 can of petite shopped tomatoes
    I block of firm tofu
    2 cans of tomato soup

    small amounts of salt and pepper to taste



Directions

Put olive oil and dry onions in 2 1/2 qt saucepan. Simmer over medium- medium low heat, until onions start to soften. Add can of tomatoes and heat thoroughly.
Blend tofu with cans of soup (NO water) in a blender. Add the onion/tomato mixture to blender. blend well. Put mixture back into saucepan and heat. DO NOT boil soup.
