Introduction

Yummy banana nut muffins, using applesauce and splenda brown sugar for sweetness... and healthy whole wheat flour, oatmeal, and flax seed. Yummy banana nut muffins, using applesauce and splenda brown sugar for sweetness... and healthy whole wheat flour, oatmeal, and flax seed.

Ingredients

    4 packages of instant oatmeal - Weight Control
    1 cup non-fat milk
    1 cup whole wheat flour
    2/3 cup Splenda brown sugar
    2/3 cup unsweetened applesauce
    1 banana, overripe and mashed
    2 egg whites
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    2 tbsp ground flax seed
    7 walnut halves, chopped

Directions

Preheat oven to 400 deg.

Spray muffin pan with cooking spray.

Combine the milk, egg whites, applesauce and 4 packets of instant oatmeal (I used 2 different flavors - cinnamon & spice and apples & cinnamon). Mix until combined.

In a separate bowl, whisk the dry ingredients together.

Add the wet ingredients to the dry mix until just combined. Add chopped nuts. Do not over mix the muffins or they will be tough.

Spoon the mixture into the muffin pan, forming a total of 12 muffins.

Bake for 20 - 25 minutes or until done. Remove from pan and enjoy!
