Ingredients

    1 lb cubed pork tenderloin
    1 tbsp mustard
    3 tbsp rice flour
    1 tbsp brown sugar
    1 tbsp minced garlic
    2 tbsp oil
    1 cup veggtable broth
    1 small onion cut ( 3/4 cup)
    2 medium sized sweet potato's
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 tbsp minced fresh parsley
    1/3 cup craisins

Directions

Toss pork with mustard and flour, brown sugar in a large resealable plastic bag. Shake to coat pork.

In a large saucepan coated with nonstick cooking spray, cook pork and garlic in oil until pork is browned on all sides. Stir in broth. Bring to a boil. Reduce heat cover and simmer for 15 min.

Stir in the onion, sweet potato (cook in microwave 5 min), salt and pepper. Return to boil. Reduce heat; cover and simmer 15-20 min longer or until meat and vegtables are tender. Stir in parsley.
