Introduction

This dish was inspired by the forest- simple, earthy ingredients for an extremely rich, complex flavor that's a lot lower in calories than you'd expect. Ingredients

    -4 ounce skinless, boneless chicken breast (roughly half of a whole breast)
    -1/8th cup crushed almonds (unsalted, unroasted. I buy them sliced for baking and then crush them in a baggie)
    -1 Tbsp Omega 3 Smart Balance buttery spread (or your favorite equivalent)
    -2 Tbsp chopped shallots (onions may be substituted)
    -1 clove of garlic, diced finely or crushed
    -6 leaves fresh basil, crushed
    -1 tsp fresh oregano, crushed
    -1/2 tsp fresh thyme
    -1/4 tsp fresh rosemary
    (Please note, all herbs can be used in their dried forms, but you will get a better flavor and texture with the fresh variety)
    -1 Portabella mushroom, diced into 1/4" cubes
    -1/8th cup reduced fat feta cheese crumbles
    -salt and pepper to taste
    OTHER ITEMS NEEDED:
    -mallet
    -string

Directions

-Pre-heat oven to 350 degrees while you prepare your ingredients.
-Melt half the Smart Balance spread in a small skillet over medium heat. Add the shallots and garlic and cook for one minute or so, until the shallots are turning translucent and the garlic is aromatic.
-Lower the heat and add mushrooms, almonds, and all herbs. Cook for approximately three minutes. The almonds will brown slightly and the mushroom pieces should release their juices and look moist. Remove the skillet from the heat and set aside.
-Butterfly the chicken breast and spread open on a plastic cutting board. Using a mallet (or, in a pinch, any heavy, sturdy object), beat the chicken breast flatter. When it is relatively uniform in thickness (be careful, it's not too difficult to tear it), cut two pieces of string and lay them under the meat.
-Spread the remaining Smart Balance on the chicken, as evenly as possible. On top of this, add the mixture from your skillet, and press down into the spread to adhere it to the chicken. It should form a thin layer. Next, sprinkle the feta evenly on top of this layer.
-Now comes the tricky part: roll the chicken carefully into a little bundle, and tie it together with the string at each end. Transfer this bundle to the pan, and sprinkle your desired salt and pepper on top. I always recommend fresh-ground pepper and sea salt or Kosher salt for the best flavor.
-Bake at 350 degrees while you ride your exercise bike/treadmill/elliptical for 30 minutes. I would recommend letting the meat rest for five or ten minutes before eating; this helps it not fall apart when released from the string. Enjoy!
