Ingredients

    1 tablespoon oil
    1 medium onion, chopped
    1 red or green bell pepper, seeded and chopped
    2 garlic cloves, minced
    1/4 cup tomato paste
    2 teaspoons chili powder
    3 cups slow cooked kidney beans
    14.5 ounce can diced tomatoes, with juices
    1 1/2 cups water
    1 tablespoon soy sauce
    3 cups long grain rice, cooked
    salt and pepper

Directions

Heat oil in skillet. Add onion, bell pepper and garlic. Cook until soft. Add tomato paste and chili powder. Stir to coat. Transfer mix to slow cooker. Add beans, tomatoes, water and soy sauce. Season with salt and pepper, cover and cook 6 hours. About 10 minutes before serving add rice.
